I have been eating very healthy this past week; however, the weekends always throw me off track. I needed something quick and delicious. I didn't have much time to look for recipes and I knew I didn't have much in the pantry. I also had two bananas that were starting to get brown. I usually make banana bread if I have three or more of those bananas so today I was at a loss. Until I decided to use those bananas as the base for the cookie. I threw together a few ingredients and within 4 minutes, I was dropping cookies on a cookie sheet and popping them into the oven!

- two very ripe bananas - mashed
- 3 packets of maple and brown sugar oatmeal (I use these for meatloaf too by the way! Yum!)
- peanut butter chips
- dark chocolate chips
Directions:
- Preheat oven to 35o degrees.
- Put bananas and oatmeal in a bowl. Mash until creamy.
- Mix in optional ingredients (chocolate chips, peanut butter chips, etc.)
- Spoon onto greased cookie sheet.
- Bake approximately 15 minutes then enjoy warm or cool them down a bit. Enjoy!!
I LOVE the little chunks of banana! Next time, I might try to be ready with regular instant oatmeal instead of the flavored to be more healthy, but I just used what I had. Mine turned out great and I cannot wait until my son wakes up from his nap so he can try them too! <3
