Ever since I found zucchini noodles, I have to eat them at least once a week. I can eat an entire plate full and not feel bloated like regular pasta would leave me feeling. The problem with slowly eating more and more "raw" food is that right now I am the ONLY one in the family that does. So when I fix "zoodles", I make a dish similar to it for the family (or at least for my husband). And I know this isn't a totally "raw" dish...I am SLOWLY building and growing into being more healthy. Step by step.
Tonight, I made Caribbean Shrimp Alfredo two ways (adapted from www.closetcooking.com).

- 1 large zucchini
- fettuccini noodles or pasta of your choice (for anyone who isn't eating "zoodles"
- Caribbean Jerk seasoning (or cajun)
- green onions (chopped, a couple tablespoons)
- 2 cloves chopped garlic
- 1/4 cup chicken broth
- 1 tablespoon butter
- 1 lb shrimp (I actually use frozen and just quickly thaw it according to the package)
- 1 cup whipping cream
- 1 cup grated parmesan cheese
Directions:
- Cook the pasta according to the package.
- Spiralize the zucchini, letting it rest on a paper towel to absorb some of the liquid
- Melt butter in pan over medium-high heat. Lightly put the shrimp in and sprinkle with caribbean seasoning. After approximately three minutes, flip them over and sprinkle seasoning on that side as well. Again, approximately three minutes on this side. Then take the shrimp out and put to the side.
- In the pan, put the garlic, shipping cream, chicken broth, parmesan cheese, and more seasoning if you desire.
- Let it bubble up and thicken for a few minutes (no more than five or it will be too thick).
- Put shrimp back in the sauce. Stir.
- Take a separate bowl and put a few tablespoons of sauce and as many shrimp as you would like to put on your zucchini noodles. Keep in mind, you do not need much sauce or it will completely overstep your zucchini. Then lighltly drizzle it on your noodles when you are ready to eat.
- Put pasta noodles in the pan with the sauce and shrimp. Stir.
- Sprinkle green onions on top and serve.
- Additional grated parmesan cheese on top made my zucchini noodles even better, but that is just me.
