I have been loving eating "raw food" lately. I still eat the same food I have in the past except for a meal or two a day, I eat very healthy. This usually means using my juicer in the mornings, soup or salad or leftovers for lunch, and a "raw" meal for dinner or just a regular healthy dinner (chicken and veggies for example).
I have made parsnip rice "stir-fry", "sushi", and my all time favorite is zucchini noodles! Last week, I bought a veggetti. It is the EASIEST thing in the world to swirl up a zucchini and throw in some pesto sauce. One day I made shrimp scampi. I gave my husband regular noodled and, for myself, I had the shrimp and sauce I had just made over zucchini noodles. Oh. My. Gosh. It was so delicious!

I am slowly learning more and more about what to make, what to buy at the local farmer's market, and am loving the change. I feel better, I have lost 7 pounds, and my food tastes better. I crave the taste of "real" food now. Slowly, I am getting rid of the processed food and would like to one day make 90% of our food homemade and keep incorporating new ways to eat our vegetables and fruits.
And truth be told...I now secretly want to buy a family farm, live off the land, and just enjoy life the way we all used to many many years ago. Until then, I will continue my back yard gardens. Until then...
