For the past two years, I have made a fruit pizza for Easter. They are so much fun to make and so much fun to eat as well! It is a great way to be creative yet it is so simple that even I can make it look interesting.

- sugar cookie mix
- strawberry cream cheese (leave out for a few minutes to soften it up)
- orange marmalade
- fruit of your own choice (I used strawberries, kiwi, pineapple and melons.)
Instructions:
- Make a giant cookie. Follow the directions the cookie mix states then put it in a giant ball slowly pushing it down until it forms an oval or just a round cookie. Bake for approximately 15 minutes.
2. Cut the edges, if you need, to form the shape you want. I had to cut mine to fit into my cake carrier.
3. Spread the cream cheese on top as if it is icing.
4. Decorate with your choice of fruit.

5. Spoon a tablespoon of orange marmalade into a microwaveable dish or mug. Heat for approximately 5-10 seconds to loosen it up.
6. Using a knife or the back of a spoon, dip it into the marmalade. Lightly spoon on the tops of the fruit with the marmalade. Not too much, just a slight glaze.

7. If not serving immediately, put in the refrigerator until ready. Be prepared for it to disappear quickly once people see it!! (So be sure to eat some yourself while you have the chance!)
